Spanikopitas

- Spanikopitas shopping list
- 1 package (17 ¼ oz.) frozen puff pastry sheets (2 sheets) shopping list
- 3 eggs shopping list
- 1 TBS. water shopping list
- ½ cup crumbled feta cheese shopping list
- 1 package (about 10 oz.) frozen chopped spinach, thawed and well drained shopping list
- 1 medium onion, finely chopped shopping list
- 2 TBS. chopped fresh parsley shopping list
How to make it
- Thaw pastry sheets at room temperature 30 minutes. Preheat oven to 400. Mix 1 egg and water and set a side. Mix remaining 2 eggs with cheese, spinach, onion and parsley and set a side.
- Unfold pastry sheets on lightly floured surface. Roll each sheet into a 12-inch square and cut each into 13 (3-inch) squares. Place 1 TBS. spinach mixture in center of each square, Brush edges of squares with egg mixture. Fold squares to form triangles. Press edges to seal. Place 2 inches apart on a baking sheet. Brush with egg mixture.
- Bake 20 minutes or until golden. Serve warm or at room temperature. Makes 32 appetizers
