Ingredients
  • Spanikopitas
  • 1 package (17 ¼ oz.) frozen puff pastry sheets (2 sheets)
  • 3 eggs
  • 1 TBS. water
  • ½ cup crumbled feta cheese
  • 1 package (about 10 oz.) frozen chopped spinach, thawed and well drained
  • 1 medium onion, finely chopped
  • 2 TBS. chopped fresh parsley

Directions
  1. Thaw pastry sheets at room temperature 30 minutes. Preheat oven to 400. Mix 1 egg and water and set a side. Mix remaining 2 eggs with cheese, spinach, onion and parsley and set a side.
  2. Unfold pastry sheets on lightly floured surface. Roll each sheet into a 12-inch square and cut each into 13 (3-inch) squares. Place 1 TBS. spinach mixture in center of each square, Brush edges of squares with egg mixture. Fold squares to form triangles. Press edges to seal. Place 2 inches apart on a baking sheet. Brush with egg mixture.
  3. Bake 20 minutes or until golden. Serve warm or at room temperature. Makes 32 appetizers

I love this recipe, Paula! I've had spanikopitas at the restaurant before, they are delicious! Added this to the "crazy about greens" group.


Very similar to turkish borek and they are delish so can't wait to try this one out
