How to make it

  • Wash, and clean brussel sprouts, removing any discoored outer leaves and coarse roots.
  • Slice brussel sprouts in half
  • In a skillet melt butter and olive oil and add the brusel sprouts and cook and stir about 5 minutes over medium heat to coat well
  • Add onion and cook a few more minutes.
  • Agg garlic and cook and stir another minute.
  • Season all liberally with salt and pepper
  • Reduce heat to low, cover and let cook 7 to 10 minutes or until sprouts become paler in color and fork tender.
  • Be careful not to over cook them!
  • You want them to hold shape and yet be tender! So it's easier to slice large sprouts in half for best cooking
  • Add the tarragon and stir well.
  • Serve!
