Needing a different recipe for preparing brussel sprouts, but a delclicous one, I came up with this which I think is company fare! The tarragon really adds a nice flavor to the recipe!

Ingredients
  • 1 to 1 1/2 lbs raw brussel sprouts
  • 2 cloves garlic
  • 2 Tbs oilve Oil
  • 2 Tbs butter
  • 1 med red onion sliced
  • salt, fresh grated pepper
  • 1 small bunch of fresh tarron rough chopped

Directions
  1. Wash, and clean brussel sprouts, removing any discoored outer leaves and coarse roots.
  2. Slice brussel sprouts in half
  3. In a skillet melt butter and olive oil and add the brusel sprouts and cook and stir about 5 minutes over medium heat to coat well
  4. Add onion and cook a few more minutes.
  5. Agg garlic and cook and stir another minute.
  6. Season all liberally with salt and pepper
  7. Reduce heat to low, cover and let cook 7 to 10 minutes or until sprouts become paler in color and fork tender.
  8. Be careful not to over cook them!
  9. You want them to hold shape and yet be tender! So it's easier to slice large sprouts in half for best cooking
  10. Add the tarragon and stir well.
  11. Serve!
