How to make it

  • In a non-stick frypan, cook the chorizo for about 4 minutes or so, then drain / blot with paper towel to remove excess grease. (you dont have to do this if you're not a fat-nazi like me) Set aside.
  • Spray a heavy saucepan (with a tight fitting lid) with oil and cook the garlic, onion, cellery and capsicums to the saucepan and cook for 2 minutes or so. add the chicken and cook for another 4 minutes...till the chicken is browned like.
  • Add everything else to the pan, except rice and spring onions.
  • Bring to the boil and add rice. Cover and simmer for 20 minutes, stirring occasionally to stop it from sticking to the bottom of your saucepan.
  • Turn off heat and let it sit for 10 minutes.
  • Serve with springonions on top.
  • YUMMYYYY
  • ....would also be good with prawns/shrimp if you wanna make it a bit fancier.
