Butter Jam Cookies

- 2 cups all purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/4 teaspoon salt shopping list
- 1 stick butter, room temperature shopping list
- 2/3 cup sugar shopping list
- 1 egg shopping list
- 2 tablespoons milk shopping list
- 1/2 teaspoon vanilla shopping list
- 1/4 cup apricot jam or your flavor of choice shopping list
How to make it
- Preheat oven to 375°. Line baking sheets with parchment.
- Whisk together the flour, baking powder, ginger and salt.
- Beat butter on medium speed until creamy and smooth.
- Add sugar and beat for 1 minute.
- Add egg and beat for 2 minutes more. The mixture will be satiny.
- Add milk and vanilla and beat just to combine.
- Reduce speed to low, add jam and beat for one minute more.
- Add dry ingredients until incorporated. You’ll have a thick dough.
- Spoon dough by rounded teaspoonfuls leaving about an inch between mounds.
- Bake for 10 to 12 minutes. The cookies should be just firm and fairly pale and browned around the edges.
- Pull sheets from oven and allow cookies to rest for a minute. Transfer to racks to cool to room temperature.
