Butter Jam Cookies Recipe
Here's one that's different! The jam isn't sandwiched in the cookie. It's in the batter! Choose your favorite flavor. I like apricot. use a good jam though. check the ingredients on the label. If the fruit isn't the first thing listed, keep looking!

Ingredients
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 stick butter, room temperature
  • 2/3 cup sugar
  • 1 egg
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla
  • 1/4 cup apricot jam or your flavor of choice

Directions
  1. Preheat oven to 375°. Line baking sheets with parchment.
  2. Whisk together the flour, baking powder, ginger and salt.
  3. Beat butter on medium speed until creamy and smooth.
  4. Add sugar and beat for 1 minute.
  5. Add egg and beat for 2 minutes more. The mixture will be satiny.
  6. Add milk and vanilla and beat just to combine.
  7. Reduce speed to low, add jam and beat for one minute more.
  8. Add dry ingredients until incorporated. You’ll have a thick dough.
  9. Spoon dough by rounded teaspoonfuls leaving about an inch between mounds.
  10. Bake for 10 to 12 minutes. The cookies should be just firm and fairly pale and browned around the edges.
  11. Pull sheets from oven and allow cookies to rest for a minute. Transfer to racks to cool to room temperature.
