How to make it

  • Preheat oven to 375°. Line baking sheets with parchment.
  • Whisk together the flour, baking powder, ginger and salt.
  • Beat butter on medium speed until creamy and smooth.
  • Add sugar and beat for 1 minute.
  • Add egg and beat for 2 minutes more. The mixture will be satiny.
  • Add milk and vanilla and beat just to combine.
  • Reduce speed to low, add jam and beat for one minute more.
  • Add dry ingredients until incorporated. You’ll have a thick dough.
  • Spoon dough by rounded teaspoonfuls leaving about an inch between mounds.
  • Bake for 10 to 12 minutes. The cookies should be just firm and fairly pale and browned around the edges.
  • Pull sheets from oven and allow cookies to rest for a minute. Transfer to racks to cool to room temperature.
