CHEESE AND GRAPE TURNOVERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thomason Estate in Wylie, Texas in 1992.

Ingredients
  • 1/4 cup cream cheese softened
  • 4 tablespoons dark brown sugar
  • 1-1/2 cups seedless grapes coarsely chopped
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups all purpose flour
  • 1/2 cup vegetable shortening
  • 1/3 cup cold water
  • 2 tablespoons melted butter

Directions
  1. Preheat oven to 400.
  2. Mix cream cheese and 2 tablespoons sugar until smooth then gently stir in grapes and set aside.
  3. Sift baking powder, salt and flour into a mixing bowl then add shortening with pastry cutter.
  4. Mix in shortening to form a coarse meal then add enough water to form a loose dough.
  5. Transfer to a floured surface and roll out dough 1/4" thick.
  6. Using a cutter or knife make 12 rounds.
  7. Place a large spoonful of filling on half of each dough round.
  8. Lightly wet edges with water and press to seal then arrange empanadas on a baking sheet.
  9. Brush with melted butter then sprinkle remaining sugar and top and bake 20 minutes.
