How to make it

  • Preheat oven to 400.
  • Mix cream cheese and 2 tablespoons sugar until smooth then gently stir in grapes and set aside.
  • Sift baking powder, salt and flour into a mixing bowl then add shortening with pastry cutter.
  • Mix in shortening to form a coarse meal then add enough water to form a loose dough.
  • Transfer to a floured surface and roll out dough 1/4" thick.
  • Using a cutter or knife make 12 rounds.
  • Place a large spoonful of filling on half of each dough round.
  • Lightly wet edges with water and press to seal then arrange empanadas on a baking sheet.
  • Brush with melted butter then sprinkle remaining sugar and top and bake 20 minutes.

    Added some dried cranberries in with red seedless grapes - HEAVEN!! The dough is like rugelach!
