Chicken With Currants And Jalapenos Recipe

Ingredients
  • 4 pound chicken cut into pieces
  • 3/4 teaspoon paprika
  • 2 tablespoons olive oil
  • 5 cloves garlic minced or pressed
  • 2 fresh jalapeno chilies seeded and minced
  • 1 large white onion chopped
  • 2 medium carrots sliced
  • 4 ounces fresh mushrooms sliced
  • 14-1/2 ounce can stewed tomatoes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dry thyme leaves
  • 3/4 cup dry white wine
  • 1/2 cup dried currants

Directions
  1. Rinse chicken then pat dry then sprinkle all over with paprika.
  2. Heat oil in a deep pan over medium high heat.
  3. Add chicken pieces a portion at a time then cook turning as needed until browned on all sides.
  4. Remove from pan and set aside.
  5. Add garlic, chilies, onion and carrots to pan.
  6. Cook stirring often until vegetables begin to brown lightly about 12 minutes.
  7. Add mushrooms, tomatoes, cumin, thyme, wine and currants then add chicken and any juices.
  8. Bring to a boil then reduce heat and simmer uncovered about 40 minutes.
