Chicken with Currants and Jalapenos

- 4 pound chicken cut into pieces shopping list
- 3/4 teaspoon paprika shopping list
- 2 tablespoons olive oil shopping list
- 5 cloves garlic minced or pressed shopping list
- 2 fresh jalapeno chilies seeded and minced shopping list
- 1 large white onion chopped shopping list
- 2 medium carrots sliced shopping list
- 4 ounces fresh mushrooms sliced shopping list
- 14-1/2 ounce can stewed tomatoes shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/2 teaspoon dry thyme leaves shopping list
- 3/4 cup dry white wine shopping list
- 1/2 cup dried currants shopping list
How to make it
- Rinse chicken then pat dry then sprinkle all over with paprika.
- Heat oil in a deep pan over medium high heat.
- Add chicken pieces a portion at a time then cook turning as needed until browned on all sides.
- Remove from pan and set aside.
- Add garlic, chilies, onion and carrots to pan.
- Cook stirring often until vegetables begin to brown lightly about 12 minutes.
- Add mushrooms, tomatoes, cumin, thyme, wine and currants then add chicken and any juices.
- Bring to a boil then reduce heat and simmer uncovered about 40 minutes.
