How to make it

  • Put rice, 1 teaspoon salt and 2 cups hot tap water in a saucepan.
  • Cover and bring to a boil over high heat then reduce to low and cook 10 minutes.
  • Keep covered until ready to serve.
  • Meanwhile put a sauté pan over high heat and add oil.
  • Season chicken with salt then add to pan and cook 3 minutes stirring twice to brown evenly.
  • While chicken cooks peel potato and cut into cubes.
  • Remove chicken to a platter then add potato to pan and stir then add onion and celery.
  • Cook 1 minute then add curry powder, cayenne and flour stirring well and cook 1 minute.
  • Add chicken broth then stir and cover then bring to boil over high heat.
  • Meanwhile core and cut apple into 1” cubes but do not peel.
  • Add chicken, apple and milk to pan then stir well cover and bring to a boil again.
  • Uncover and cook 3 minutes until slightly thickened stirring occasionally.
  • Serve over rice sprinkled with cilantro.
