Curried Chicken With Apples and Sweet Potatoes

- 1 cup basmati rice shopping list
- 1 teaspoon salt shopping list
- 1-1/2 tablespoons canola oil shopping list
- 1-1/2 pounds boneless skinless chicken breasts or tenders cut into 1” cubes shopping list
- 1 large sweet potato shopping list
- 1 medium white onion peeled and chopped shopping list
- 1 rib celery trimmed and cut crosswise into 1/2" crescents shopping list
- 1-1/2 tablespoons curry powder shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1 tablespoon all purpose flour shopping list
- 14 ounce can chicken broth shopping list
- 1 large crisp apple shopping list
- 5 ounce can evaporated milk shopping list
- 4 sprigs chopped fresh cilantro shopping list
How to make it
- Put rice, 1 teaspoon salt and 2 cups hot tap water in a saucepan.
- Cover and bring to a boil over high heat then reduce to low and cook 10 minutes.
- Keep covered until ready to serve.
- Meanwhile put a sauté pan over high heat and add oil.
- Season chicken with salt then add to pan and cook 3 minutes stirring twice to brown evenly.
- While chicken cooks peel potato and cut into cubes.
- Remove chicken to a platter then add potato to pan and stir then add onion and celery.
- Cook 1 minute then add curry powder, cayenne and flour stirring well and cook 1 minute.
- Add chicken broth then stir and cover then bring to boil over high heat.
- Meanwhile core and cut apple into 1” cubes but do not peel.
- Add chicken, apple and milk to pan then stir well cover and bring to a boil again.
- Uncover and cook 3 minutes until slightly thickened stirring occasionally.
- Serve over rice sprinkled with cilantro.
