Chef James Brockman of right@home has graced us with this very "different" egg salad sandwich. I don't know about you but it sure sounds good to me!

Ingredients
  • 5 whole eggs OR 7 egg whites, hard boiled
  • 1 tablespoon sweet pickle relish
  • 1/4 cup scallions, thinly sliced
  • 2 teaspoons fresh dill OR 1 teaspoon dried dill, minced
  • 6 fresh basil leaves, chopped OR 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 tablespoons sour cream
  • 4 tablespoons celery, finely chopped
  • 2 teaspoons Dijon mustard
  • 8 slices rye bread, toasted
  • 1 tomato cut into 8 slices
  • 1 cup baby arugula OR 4 leaves of your favorite lettuce

Directions
  1. Grate OR chop eggs/egg whites into a bowl.
  2. Add the relish, scallion, dill, basil, oregano, sour cream, celery and Dijon mustard.
  3. Stir until evenly mixed.
  4. Divide egg salad bwtween 4 slices of the toasted (or untoasted) rye.
  5. Tp each sandwich with two slices of tomato and arugula/lettuce.
  6. Top with remaining slices of bread.
  7. Serve.
