Tomato and Grilled Bread Salad

- 4 slices sourdoush bread, a little on the thick side shopping list
- 2 garlic cloves, peeled but whole shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 1/2 pounds vine-ripened tomatoes, coarsely chopped shopping list
- 2 ounces pitted black olives shopping list
- 1 tablespoon aged balsamic vinegar shopping list
- Handful of fresh basil leaves, torn shopping list
- Sae salt and freshly ground black pepper shopping list
How to make it
- Grill bread until toasted on both sides.
- Remove from grill.
- Rub bread with garlic cloves.
- Sprinkle with 2 tablespoons olive oil.
- Allow bread to cool.
- Cut into cubes.
- Place the grilled bread into a large bowl.
- Add the tomatoes and olives.
- In a separate bowl mix the vinegar and remaining olive oil.
- Pour over the salad.
- Season salad with salt and pepper.
- Stir well.
- Allow salad to sit for 30 minutes to infuse the flavors.
- Stir in basil leaves.
- Serve.
