Ingredients
  • 4 slices sourdoush bread, a little on the thick side
  • 2 garlic cloves, peeled but whole
  • 1/4 cup extra virgin olive oil
  • 1 1/2 pounds vine-ripened tomatoes, coarsely chopped
  • 2 ounces pitted black olives
  • 1 tablespoon aged balsamic vinegar
  • Handful of fresh basil leaves, torn
  • Sae salt and freshly ground black pepper

Directions
  1. Grill bread until toasted on both sides.
  2. Remove from grill.
  3. Rub bread with garlic cloves.
  4. Sprinkle with 2 tablespoons olive oil.
  5. Allow bread to cool.
  6. Cut into cubes.
  7. Place the grilled bread into a large bowl.
  8. Add the tomatoes and olives.
  9. In a separate bowl mix the vinegar and remaining olive oil.
  10. Pour over the salad.
  11. Season salad with salt and pepper.
  12. Stir well.
  13. Allow salad to sit for 30 minutes to infuse the flavors.
  14. Stir in basil leaves.
  15. Serve.
