Ingredients

How to make it

  • Dissolve yeast in 1/4 to 1/2 cup warm water.
  • Allow to sit until it's time to use it.
  • Sift flour onto board OR clean counter in a circle or well (I don' t sift it).
  • Beat together the eggs, cheese and salt.
  • Pour into the center of the well/circle.
  • Add the lard to the circle.
  • Mix lightly.
  • Add yeast to the circle.
  • Mix lightly again.
  • Grease two 8 or 9" cast iron skillets well.
  • Divide dough between the skillets.
  • Cover skillets with dampt kitchen towels.
  • Allow to rise "as long as it takes" until doubled in size.
  • Bake for 45 minutes OR until tapping on bread makes a hollow sound.
  • Remove from oven.
  • Run a knife around the pan to loosen edges.
  • Invert pans to remove breads.
  • **According to my dad if the breads stuck in the pans, it was your fault.
  • **I like to cut slices and allow them to get stale before eating it because it brings out the cheesiness!
  • **OK, friends. Angst to tears.... time for a break.
