Turta - Italian Cheese Bread

- 5 cups +- all purpose flour shopping list
- 12 large eggs, room temperature shopping list
- 1/2 teaspoon salt shopping list
- 1/2 lard, warm and melted shopping list
- 10 ounces pecorino romano cheese (doesn't hurt to have some locatelli!) shopping list
- 2 packages dry yeast shopping list
How to make it
- Dissolve yeast in 1/4 to 1/2 cup warm water.
- Allow to sit until it's time to use it.
- Sift flour onto board OR clean counter in a circle or well (I don' t sift it).
- Beat together the eggs, cheese and salt.
- Pour into the center of the well/circle.
- Add the lard to the circle.
- Mix lightly.
- Add yeast to the circle.
- Mix lightly again.
- Grease two 8 or 9" cast iron skillets well.
- Divide dough between the skillets.
- Cover skillets with dampt kitchen towels.
- Allow to rise "as long as it takes" until doubled in size.
- Bake for 45 minutes OR until tapping on bread makes a hollow sound.
- Remove from oven.
- Run a knife around the pan to loosen edges.
- Invert pans to remove breads.
- **According to my dad if the breads stuck in the pans, it was your fault.
- **I like to cut slices and allow them to get stale before eating it because it brings out the cheesiness!
