How to make it

  • Preheat oven to 450.
  • Snap off tough woody ends from each stalk.
  • Arrange asparagus on a large baking sheet.
  • Mix peanut oil with garlic then drizzle over spears and toss gently to coat well.
  • Spread spears out in a single layer over baking sheet then place baking sheet in oven.
  • Roast shaking pan once or twice to turn spears until asparagus is lightly browned.
  • Combine peanut butter, soy sauce, lemon juice and pepper flakes in a small bowl.
  • Use a rubber spatula to work ingredients together until well combined.
  • Add enough water to make mixture thin enough to pour smoothly then adjust seasonings.
  • Transfer roasted asparagus to a large platter then drizzle peanut sauce over top and serve.
