Roasted Asparagus With Asian Peanut Sauce

- 1-1/2 pounds thin or medium asparagus shopping list
- 2 tablespoons peanut oil shopping list
- 2 medium garlic cloves minced shopping list
- 2 tablespoons creamy peanut butter shopping list
- 1-1/2 teaspoons soy sauce shopping list
- 1-1/2 teaspoons lemon juice shopping list
- 1/4 teaspoon hot red pepper flakes shopping list
- 3 tablespoons water shopping list
How to make it
- Preheat oven to 450.
- Snap off tough woody ends from each stalk.
- Arrange asparagus on a large baking sheet.
- Mix peanut oil with garlic then drizzle over spears and toss gently to coat well.
- Spread spears out in a single layer over baking sheet then place baking sheet in oven.
- Roast shaking pan once or twice to turn spears until asparagus is lightly browned.
- Combine peanut butter, soy sauce, lemon juice and pepper flakes in a small bowl.
- Use a rubber spatula to work ingredients together until well combined.
- Add enough water to make mixture thin enough to pour smoothly then adjust seasonings.
- Transfer roasted asparagus to a large platter then drizzle peanut sauce over top and serve.
