Wine Jelly Recipe
I found this recipe in the newspaper and made it this afternoon. It has a wonderful taste and was very easy. I am putting it in 1/2 pint decorative jars and will be giving it as gifts.

Ingredients
  • 3 1/2 cups of wine (I used white zin because it is the gift recipients favorite)
  • 1/2 cup lemon juice
  • 1.75 oz package of dry pectin
  • 4 1/2 cups white sugar

Directions
  1. Wash and sterilize jars and lids. Keep jars warm.
  2. Combine wine, Lemon Juice and pectin in a large pot. Bring to a boil, stiring frequently.
  3. Add sugar and stir until dissolved. Return to a rolling boil and boil hard for 1 minute stirring constantly.
  4. Remove from heat and skim foam off top, if necessary.
  5. Ladel into hot jars leaving 1/2 inch headspace.
  6. Tighten 2 piece lids and process for 5 minutes in boiling water bath.
