Open Minded Caramel Flan With a Touch of Brandy

- 3/4 cup granulated sugar shopping list
- 2 cups milk shopping list
- 2 cups light cream shopping list
- 6 eggs shopping list
- 1/2 cup sugar shopping list
- 1/2 teaspoons salt shopping list
- 2 teaspoons vanilla extract shopping list
- 1/3 cups brandy shopping list
- boiling water shopping list
How to make it
- Place sugar in large heavy skillet then cook over medium until sugar melts and forms light syrup.
- Stir to blend well then immediately pour syrup into heated round shallow baking dish.
- Quickly rotate to cover bottom and sides completely then set aside.
- Preheat oven to 325.
- In medium saucepan heat milk and cream just until bubbles form around edge of pan.
- In large bowl with rotary beater beat eggs slightly then add sugar, salt and vanilla.
- Gradually stir in hot milk mixture and brandy then pour into prepared dish.
- Set dish in shallow pan and pour boiling water to 1/2" level around dish and bake 40 minutes.
- Allow to cool and room temperature then refrigerate at least 4 hours or overnight.
