Open Minded Caramel Flan With A Touch Of Brandy Recipe
OPEN MINDED CARAMEL FLAN WITH A TOUCH OF BRANDY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marquees Estate in Dallas, Texas in 1994.

Ingredients
  • 3/4 cup granulated sugar
  • 2 cups milk
  • 2 cups light cream
  • 6 eggs
  • 1/2 cup sugar
  • 1/2 teaspoons salt
  • 2 teaspoons vanilla extract
  • 1/3 cups brandy
  • Boiling water

Directions
  1. Place sugar in large heavy skillet then cook over medium until sugar melts and forms light syrup.
  2. Stir to blend well then immediately pour syrup into heated round shallow baking dish.
  3. Quickly rotate to cover bottom and sides completely then set aside.
  4. Preheat oven to 325.
  5. In medium saucepan heat milk and cream just until bubbles form around edge of pan.
  6. In large bowl with rotary beater beat eggs slightly then add sugar, salt and vanilla.
  7. Gradually stir in hot milk mixture and brandy then pour into prepared dish.
  8. Set dish in shallow pan and pour boiling water to 1/2" level around dish and bake 40 minutes.
  9. Allow to cool and room temperature then refrigerate at least 4 hours or overnight.
