How to make it

  • Place sugar in large heavy skillet then cook over medium until sugar melts and forms light syrup.
  • Stir to blend well then immediately pour syrup into heated round shallow baking dish.
  • Quickly rotate to cover bottom and sides completely then set aside.
  • Preheat oven to 325.
  • In medium saucepan heat milk and cream just until bubbles form around edge of pan.
  • In large bowl with rotary beater beat eggs slightly then add sugar, salt and vanilla.
  • Gradually stir in hot milk mixture and brandy then pour into prepared dish.
  • Set dish in shallow pan and pour boiling water to 1/2" level around dish and bake 40 minutes.
  • Allow to cool and room temperature then refrigerate at least 4 hours or overnight.
