ORANGE TAPIOCA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barker Estate in Gainesville, Texas in 2001.

Ingredients
  • 1-1/2 cups milk
  • 1 egg beaten
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 3 tablespoons quick cooking tapioca
  • 1/2 cup orange juice
  • 1/2 teaspoon vanilla
  • 1/2 cup diced fresh oranges

Directions
  1. Combine milk, egg, sugar, salt and tapioca in saucepan.
  2. Cook on medium heat stirring constantly until mixture boils.
  3. Remove from heat and add orange juice slowly stirring constantly.
  4. Return to heat stirring until mixture boils.
  5. Remove from heat and let cool stirring occasionally then mix in vanilla and diced orange.
  6. Chill before serving.
