Espresso Coins

- 1 tsp cornstarch shopping list
- 3 tbsp cold water shopping list
- 1 cup flour shopping list
- 3/4 cup spelt flour shopping list
- 1 tbsp ground espresso shopping list
- 1/4 tsp baking soda shopping list
- 1/4 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2 cup stick margarine, room temperature shopping list
- 1/4 cup shortening shopping list
- 1/2 cup sugar shopping list
- 1/3 cup brown sugar shopping list
- 2 tsp coffee liqueur shopping list
How to make it
- Preheat oven to 350F. Line baking sheets with parchment.
- combine cornstarch and water in a small dish, set aside.
- In a medium bowl, mix flours, espresso, baking soda, baking powder and salt. Set aside.
- Cream margarine, shortening and sugars until fluffy.
- Add coffee liqueur, followed by the cornstarch slurry, mixing until combined.
- Slowly beat in dry ingredients.
- Drop tablespoons of dough 2" apart on trays and flatten slightly.
- Bake 15 minutes, cool completely on sheets.
