Light and Lively Raspberry Muffins

- 1/2 cup plain yoghurt, low fat shopping list
- 1/2 cup cottage cheese, low or non fat shopping list
- 2 eggs shopping list
- 1 cup sugar shopping list
- 1/2 cup honey shopping list
- 3 tbs oil shopping list
- 1 Tbs lemon juice shopping list
- 2 tsp vanilla shopping list
- 2 1/2 cups flour shopping list
- 1 Tbs baking powder shopping list
- 1 pint fresh raspberries, or frozen, thawed and not in syrup but fresh is best shopping list
How to make it
- In mixer bowl blend yoghurt and cottage cheese high speed for 3 minutes.
- Add eggs, sugar, honey, oil, lemon juice and vanilla
- Blend well
- Mix combined flour with baking powder and blend into mixture for 3 minutes more.
- Fold in fresh berries
- Spoon into muffin cups about 3/4 full
- Bake in a 350 oven until tested done in center
- Or bake in a 9 inch loaf pan 30 minutes or tested done
