Lamb Spinach And Feta Meatloaf Recipe
This rolled meatloaf was so easy to make and looked impressive coming out of the oven. It was delicious, too.

Ingredients
  • 1 1/2 pounds ground lamb
  • 1 small onion, finely chopped
  • 1 cup bread cubes, white or wheat
  • 1/2 cup milk
  • 1 egg
  • salt and pepper to taste
  • 1 teaspoon dried herbs (I used Penzey's Bavarian Seasoning and it was great)
  • 8-10 ounces frozen chopped spinach, thawed and drained
  • 6 ounces crumbled feta
  • 1 cup marinara sauce

Directions
  1. Mix bread and milk in bowl and let sit until softened.
  2. Combine lamb, onions, egg, spices, and bread-milk mixture in bowl.
  3. You can cook a little piece to check for seasoning if desired.
  4. If mixture is too loose, you can add a couple tablespoons of dried bread crumbs to bind it a bit.
  5. Put a piece of waxed paper, parchment or foil on a baking sheet.
  6. Spread meat mixture on paper in a rectangle.
  7. Spread spinach on top, and feta on top of spinach.
  8. Using paper to help, roll it up like a jelly roll and place in baking pan.
  9. Pour marinara sauce on top and around the roll.
  10. Bake in a preheated 400 degree oven for 1/2 hour.
  11. Turn oven down to 350 and bake for another 20 minutes or until done.
