Sweet Potato Encrusted Chicken Recipe

Ingredients

1 6 oz box of sweet potato pancake mix

1 tsp poultry seasoning

6 pices of skinless boneless chicken breasts

Sauce:

1 1/2 cups apricot preserves

3 Tbs white grape juice

1 clove garlic minced

1 jalepeno pepper, seeded and minced

Directions

Combine the dry pancake mix and poultry seasoning in a bowl

Dredge chicken pieces well with pancake mix

Place in a 9 13 baking dish sprayed with cooking oil

Placew in a 350F oven and bake 30 to 40 minutes or cooked through

Make sauce:

Combine all sauce ingrdients till well heated.

Place chicken on a serving platter, drizzle with 1/4 cup sauce and place remaining sauce in pitcher for side serving
