Mushroom and Potato Chowder

- 1/2 cup onion -- chopped shopping list
- 1/4 cup butter or margarine shopping list
- 2 tablespoons flour shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 3 cups water shopping list
- 1 pound mushrooms -- sliced shopping list
- 1 cup celery -- sliced shopping list
- 1 cup potatoes -- diced, peeled shopping list
- 1/2 cup carrots -- chopped shopping list
- 1 cup light cream shopping list
- 1/4 cup parmesan cheese -- grated shopping list
How to make it
- In a large kettle, saute onion in butter until tender.
- Add flour, salt and pepper; stir to make a smooth paste.
- Gradually add water, stirring constantly.
- Bring to a boil; cook and stir for 1 minute.
- Add the mushrooms, celery, potatoes and carrots,
- Reduce heat; cover and simmer for 30 minutes or until vegetables are tender.
- Add cream and parmesan cheese; heat through
