How to make it

  • In a hot, med-sized, thick-bottomed soup pot, sweat the garlic and onions in the butter for a few mins. They will aromatize when ready.
  • Add the remaining ingredients.
  • Stir this a little while bringing the mixture to a boil then reduce the heat to just a simmer. Simmer the soup until the apples soften up, about 20 mins.
  • Puree the soup in a blender until smooth. Now strain it through a FINE mesh strainer (hopefully you have one).
  • Serve the soup immediately by returning it to its clean pot and reheating. You can also refrigerate this to serve later.
