Ingredients
  • 8 ounces pitted dates, chopped
  • 8 ounces seedles raisins, large golden
  • 2 teaspoons baking soda
  • 2 cups boiling water
  • 1 1/2 cups sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder

Directions
  1. Preheat oven to 320 degrees F. (160 C).
  2. Line an 8" cake tin with baking paper.
  3. Combine chopped dates, raisins and baking soda in a large bowl.
  4. Pour in the boiling water, stir.
  5. Leave to cool for 10 minutes.
  6. Add the sugar and stir to dissolve.
  7. Fold in the sifted flour and baking powder until just combined.
  8. Don't overmix at this point or the loaf will be tough.
  9. Place dough into a loaf pan (no instruction on original recipe from Lizzie!).
  10. Bake for 1 1/4 to 1 1/2 hours OR until toothpick inserted comes out clean.
  11. Leave in tin to cool for 10 minutes.
  12. Turn out onto cooling rack.
