How to make it

  • Combine oats, Red River and milk in large bowl, let stand 40 minutes.
  • Combine remaining dry ingredients.
  • Add butter and egg to cereal mixture.
  • Add dry ingredients& mix well.
  • Stir in dates.
  • Spoon into 12 greased muffin tins.
  • Bake at 375 degrees for 20-25 minutes or until set.
  • Turn out to cool and store in airtight container, if there are any to store.
  • Prep time includes letting cereal soak for 40 minutes.

    Okay Eirika, here's the photo I promised! I didn't have quite a cup of dates, so supplemented them with a chopped up pear. The house smells incredible--too bad we can't photograph that! The muffins are simply delicious. Thanks for the recipe, Eirika!

    Hi Eirika,
    I'm going to try this recipe using Bob's Red Mill cereal, a multi-grain cooked cereal available here in the States. I also have some phenomenal dates from a grower in Arizona, www.Dateland.com Their crop of jumbo Medjool dates is available In October. I try to buy enough to last a year and keep them in the freezer--they are incredible. I'll submit a photo of the results for you. :-) Chris
