How to make it

  • Place the tea bags, apricots, and sugar in a large heatproof jar or pitcher, and cover with the boiling water. Let cool. Squeeze the tea bags and discard. Cover and refrigerate the tea for 2 days or longer to allow the apricots to steep.
  • To serve, put a couple of tea-soaked apricot pieces in a glass, then fill with ice cubes. Pour in tea and garnish with a sprig of mint.
