- 3 cups unbleached or semolina flour shopping list
- 1/2 teaspoon sea salt shopping list
- 3 large eggs shopping list
- 3 tablespoons water shopping list
- 3 teaspoons olive oil shopping list
- rice flour shopping list
- sea salt shopping list
How to make it
- Assemble food processor, add eggs, water, olive oil and salt to bowl. Pulse a couple of times to mix.
- Add flour to bowl of food processor, turn on. Process until dough is like coarse crumbs (about 20 seconds or so).
- Remove dough from bowl and knead until dough comes together (about 1 minute) . Cut into 4 pieces and return to FP bowl, process until dough is like coarse crumbs (15-20 seconds), repeat twice more. If dough seems a little too stiff, run one or two of the pieces under water for a second before putting back into the bowl for reprocessing.
- Wrap dough in plastic or place in covered container for at least 30 minutes to allow dough to relax.
- Cut dough in half, keeping other half covered until you're ready to work with it. Generously dust work surface with rice flour and start to roll out your dough (or, start to process with pasta roller). If dough snaps back while rolling, rewrap and let rest for 20 minutes to allow it to relax. repeat as necessary, don't worry, you'll get there!
- Continue rolling until dough gets to desired thickness - for thin fettucini, you should be able to see through the dough. If using pasta roller, run through roller, adjusting thinner each time until your pasta is as thin as you'd like it. Dust generously with rice flour to keep pasta from sticking as you're working with it. Repeat with reserved dough.
- Bring pot of generously salted water to a boil, boil pasta until desired doneness, thin pasta usually takes about 2-3 minutes.
