Roasted Snapper With Tomato Relish

- 2 tablespoons olive paste shopping list
- 1 tablespoon Dijon mustard shopping list
- 6 snapper fillets skinned shopping list
- 2 tomatoes seeded and diced shopping list
- 2 tablespoons fresh basil chopped shopping list
- Combine olive paste and mustard then mix well. shopping list
How to make it
- Preheat oven to 500 then grease a jellyroll pan.
- Fold ends of fillets under so each fillet forms a square then place in pan.
- Spread olive paste mixture over fillets then bake 15 minutes.
- Combine tomatoes, basil and 1/4 teaspoon each salt and pepper.
- Mix and spoon over fillets.
