Roasted Snapper With Tomato Relish Recipe
ROASTED SNAPPER WITH TOMATO RELISH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Armstrong Estate in Belton, Texas in 1990.

Ingredients
  • 2 tablespoons olive paste
  • 1 tablespoon Dijon mustard
  • 6 snapper fillets skinned
  • 2 tomatoes seeded and diced
  • 2 tablespoons fresh basil chopped
  • Combine olive paste and mustard then mix well.

Directions
  1. Preheat oven to 500 then grease a jellyroll pan.
  2. Fold ends of fillets under so each fillet forms a square then place in pan.
  3. Spread olive paste mixture over fillets then bake 15 minutes.
  4. Combine tomatoes, basil and 1/4 teaspoon each salt and pepper.
  5. Mix and spoon over fillets.
