My grampa's favorite cookie were Lorna Doones. I even have the container that he used to keep them in. Everytime I see that container or make this dessert I remember him sitting at the kitchen table with his cookies and coffee. I really miss him.

Ingredients
  • 1-10oz. package Lorna Doone cookies; crushed
  • 1 stick margarine; melted
  • 2- 3.75oz. pkg. instant white chocolate pudding
  • 2c. milk
  • 1qt. vanilla ice cream; softened
  • 9oz. Cool Whip
  • chopped, salted pecans

Directions
  1. Mix crushed cookies and margarine.
  2. Pat into 9x13" pan & bake @ 350F for 10 min. Cool crust completely.
  3. Whip pudding and milk. Add ice cream and whip again.
  4. Spread ice cream mixture over crust and refrigerate.
  5. Once set, spread top with Cool Whip and sprinkle with chopped pecans.
  6. NOTE:
  7. This is also good with coconut cream or vanilla pudding.
