A thick and spicy soup flavored with chili and peanuts..... who could resist .. these flavors .yummm

Ingredients
  • 2- tablespoon oil
  • 1- large onion , finely chopped
  • 2- garlic cloves, crushed
  • 1- teaspoon mild chili powder
  • 2- red bell peppers seeded and finely chopped
  • 8 - ounces of carrots , finely chopped
  • 8 - ounces of potatoes finely chopped
  • 3- celery sticks , sliced
  • 3 3/4- cups vegetable stock
  • 6- tablespoon crunchy peanut butter
  • 2/3- cup corn
  • salt and black pepper to taste
  • roughly chopped unsalted roasted peanuts to garnish if desired

Directions
  1. Heat the oil in a large pan and cook the onion and garlic for about 3 minutes
  2. add the chili powder and cook further 1minute
  3. add the red peppers, carrots, potatoes and celery
  4. stir well then cook for a further 4 minutes stirring occasionally........
  5. add the vegetable stock, followed by the peanut butter and corn..
  6. stir until thoroughly combined
  7. season well
  8. bring to a boil.cover and simmer now for 20 minutes until all vegetables are tender..
  9. serve with garnished chopped peanuts.........enjoy ..........
