Greek Isle Rice Salad

- 1- package of beef- flavor - rice a roni shopping list
- 2- tablespoons butter shopping list
- 8- ounces thick deli sliced roast beef cut into 1/2 inch pieces shopping list
- 1/2- cup chopped red onion shopping list
- 1/2- cup sliced black olives shopping list
- 3- plum tomatoes, seeded and chopped shopping list
- 1/3- cup olive oil shopping list
- 1/4- cup lemon juice shopping list
- 2- cloves garlic , crushed shopping list
- 1/2- teaspoon dried oregano shopping list
- 1/2- teaspoon ground black pepper shopping list
- 1- medium cucmber, thinly sliced shopping list
- 1/2- cup crumbled feta cheese shopping list
How to make it
- In a large skillet over medium heat , saute th e rice a roni with butter until the vermicelli in the rice a roni is golden brown
- slowly stir in 2 1/2- cups water and specail seasonings and bring to a boil
- reduce heat to low simmer 15 to 20 minutes- or until the rice is tender.cool completely
- in a large bowl , combine olive oil, lemon juice, garlic, oregano, and pepper, with a wire whisk.....
- toss rice mixture with dressing ..........
- chill at least 30 minutes .....
- garnish with cucmber slices and feta cheese
