Spicy Red Lentils Stew

- 2 cans reduced sodium chicken broth (14.5 oz cans) shopping list
- 1 cup red lentils, picked over, rinsed, and drained shopping list
- 1 medium onion, chopped shopping list
- 1 carrot, chopped shopping list
- ¾ tsp curry powder shopping list
- ½ tsp ground cumin shopping list
How to make it
- Combine the broth, lentils, onion, carrot, curry powder, and cumin in a large saucepan, and bring to a boil.
- Reduce the heat and simmer covered, until the lentils are tender but still hold their shape – about 15 minutes.
- Add chopped cauliflower and some frozen peas for a little variation.
