Spicy Red Lentils Stew Recipe
This is more like a comfort food and great in the winter. The spicy-ness really warms you up on a cold day. It's great for a quick lunch.

Ingredients
  • 2 cans reduced sodium chicken broth (14.5 oz cans)
  • 1 cup red lentils, picked over, rinsed, and drained
  • 1 medium onion, chopped
  • 1 carrot, chopped
  • ¾ tsp curry powder
  • ½ tsp ground cumin

Directions
  1. Combine the broth, lentils, onion, carrot, curry powder, and cumin in a large saucepan, and bring to a boil.
  2. Reduce the heat and simmer covered, until the lentils are tender but still hold their shape – about 15 minutes.
  3. Add chopped cauliflower and some frozen peas for a little variation.
