How to make it

  • Place ham hocks, salt pork, onion, bay leaves, red pepper flakes, and sugar in a large pot with the chicken stock. Bring to a boil, reduce heat to simmer, and cook for 30 minutes
  • Stir collard greens into the pot, and bring to a boil. Reduce heat to simmer, and cook for 30 minutes, or until greens are tender. Season with red wine vinegar and salt and pepper to taste.

    This recipe sounds absolutely fantastc! I need to get some salt pork and ham hocks, and then I can cook this meal. I'm really looking forward to this - I've not had ham hocks in over 30 years, and I am a big fan of salt pork and greens! I will rate this as well for you when I've made it. Thank you for telling me about this - My mouth is watering lol. The salt pork and ham hocks sound like a brilliant combination, and with the red wine vinegar, bay leaves, red pepper flakes, onions and the other ingredients - Yummmmmmmmmm!
