Ingredients
  • 8 Cornish game hens, rinsed and patted dry
  • 1 stick butter, melted
  • 1 cup whole cranberry sauce
  • 1/2 cup orange marmalade
  • 1/4 cup lemon juice
  • 1 tablespoon dried minced onion
  • 4 teaspoons cornstarch
  • 1 cup mandarin oranges, drained

Directions
  1. Brush game hens with butter inside and out.
  2. Sprinkle with salt and pepper.
  3. Place hens breasts side up on rack in shallow roasting pan.
  4. Cover loosely with foil.
  5. Roast at 375 degrees for 30 minutes.
  6. Meanwhile, in saucepan, combine cranberry sauce, marmalade, lemon juice, onion and cornstarch. Cook, stirring until thickened.
  7. Remove from heat. Stir in mandarin oranges.
  8. Uncover hens and continue to roast 1 hour.
  9. Brush with glaze several times during the last 20 minutes of roasting.
