Simple Beef Curry Recipe
Simple to make with stew beef, this is a filling but healthy supper for cold weather. If you prefer, use prepared curry powder instead of the individual spices listed. For weightwatchers, one serving with rice included is 8 points.

Ingredients
  • 3 tbsp olive oil
  • 2 tbsp cumin (or to taste)
  • 2 tbsp coriander (or to taste)
  • 2 tbsp garam masala (or to taste)
  • 2 tbsp crushed garlic
  • 2 1/2 lbs stew beef, cubed
  • 3 large red bell peppers, seeded and diced
  • 3 tbsp cider vinegar
  • 1 tsp salt
  • 4 cups water
  • 3 cups uncooked rice

Directions
  1. Prepare rice according to package directions (usually takes about 50 minutes, so can cook while the rest is being made).
  2. Heat oil in saucepan over medium heat.
  3. Add spices and garlic to oil and stir until spices release fragrance but do not burn, 1 to 2 minutes.
  4. Add beef cubes and stir to coat completely. Cook stirring constantly until beef is browned.
  5. Add bell pebber and vinegar and cook until peppers are limp, about 3 minutes.
  6. Add salt and stir.
  7. Add water and simmer over low heat, stirring frequently until liquid is reduced and meat is tender, about 30 to 45 minutes.
  8. Serve over rice.
