Filled Butternut

- 500g Lean Mince shopping list
- 1x Medium Sized onion shopping list
- 15ml balsamic vinegar shopping list
- 25ml chutney shopping list
- Grated cheddar cheese & nutmeg for baking shopping list
- Crushed garlic, salt, pepper to taste shopping list
How to make it
- Cut the Butternut in half lengthwise and remove seeds.
- If the hollow isn't very big, remove some of the butternut along the upper part (almost like making a "trench").
- Sautee the Onion and Garlic and add the mince.
- Brown the mince, adding balsamic vinegar, spices and chutney. When the mince is halfway done, scoop into the butternut halves and fill to the brim.
- Cover with cheese (alternatively first cover with a layer of mashed potatoes and then the cheese).
- Sprinkle Nutmeg along the exposed bits of Butternut.
- Arrange alongside each other in an ovenproof dish and cover with tinfoil.
- Place in Preheated oven at 180C degrees and bake for approximately 1hr or until butternut is soft when pricked with a fork.
- Alternative: to halve the cooking time boil the butternut halves until almost done before baking.
