A nice variation on filled tomatoes or peppers! I love this! Butternut is so versatile!

Ingredients
  • 500g Lean Mince
  • 1x Medium Sized Onion
  • 15ml Balsamic Vinegar
  • 25ml Chutney
  • Grated Cheddar Cheese & Nutmeg for baking
  • Crushed Garlic, Salt, Pepper to taste

Directions
  1. Cut the Butternut in half lengthwise and remove seeds.
  2. If the hollow isn't very big, remove some of the butternut along the upper part (almost like making a "trench").
  3. Sautee the Onion and Garlic and add the mince.
  4. Brown the mince, adding balsamic vinegar, spices and chutney. When the mince is halfway done, scoop into the butternut halves and fill to the brim.
  5. Cover with cheese (alternatively first cover with a layer of mashed potatoes and then the cheese).
  6. Sprinkle Nutmeg along the exposed bits of Butternut.
  7. Arrange alongside each other in an ovenproof dish and cover with tinfoil.
  8. Place in Preheated oven at 180C degrees and bake for approximately 1hr or until butternut is soft when pricked with a fork.
  9. Alternative: to halve the cooking time boil the butternut halves until almost done before baking.
