How to make it

  • Cut the Butternut in half lengthwise and remove seeds.
  • If the hollow isn't very big, remove some of the butternut along the upper part (almost like making a "trench").
  • Sautee the Onion and Garlic and add the mince.
  • Brown the mince, adding balsamic vinegar, spices and chutney. When the mince is halfway done, scoop into the butternut halves and fill to the brim.
  • Cover with cheese (alternatively first cover with a layer of mashed potatoes and then the cheese).
  • Sprinkle Nutmeg along the exposed bits of Butternut.
  • Arrange alongside each other in an ovenproof dish and cover with tinfoil.
  • Place in Preheated oven at 180C degrees and bake for approximately 1hr or until butternut is soft when pricked with a fork.
  • Alternative: to halve the cooking time boil the butternut halves until almost done before baking.
