Ingredients
  • 6 - 8 pork loin chops
  • 1 medium onion, sliced - red, white or brown
  • 1 bell pepper, sliced - red, yellow or green
  • 1 - 14 oz can Diced Tomatoes
  • seasoned breadcrumbs to coat
  • ground mustard
  • parsley flakes
  • garlic salt
  • pepper
  • parmesan cheese
  • water

Directions
  1. Preheat oven to 375F
  2. Season chops with garlic salt & pepper, parsley flakes, ground mustard.
  3. Coat with seasoned breadcrumbs
  4. Lightly spray baking pan with cooking oil.
  5. Place chops in pan, layer peppers and onions over and around chops.
  6. Bake in preheated oven for 20 minutes. Turn chops and cook a further 10 minutes. Then pour diced tomatoes and 3 tblsps water over top. Sprinkle parmesan cheese over all.
  7. Return to oven for further 20 - 30 minutes until sligthly golden.
  8. Serve with mashed potatoes and side salad.
