How to make it

  • Cream butter and sugar together. Add the eggs, one at a time. Add flour, baking powder, and vanilla.
  • Mix together fruit, nuts and coconut and toss with a bit of flour.
  • Add butter/sugar mix to fruit and combine.
  • Bake in non-stick or parchment lined and buttered pans at 225 degrees for four hours.
