White Fruitcake Recipe

For those who thought they didn't like fruitcake...please try this one. I was one of those people.

Ingredients
- ¾c butter
- 2 C sugar
- 10 eggs
- 4C flour
- 1candied cherries, chopped
- 1c candied pineapple, chopped
- 1c pecans, chopped
- 1c white raisins
- ¼ccoconut flakes
- 1t vanilla (please use the best extract)
- 1t baking powder
Directions
- Cream butter and sugar together. Add the eggs, one at a time. Add flour, baking powder, and vanilla.
- Mix together fruit, nuts and coconut and toss with a bit of flour.
- Add butter/sugar mix to fruit and combine.
- Bake in non-stick or parchment lined and buttered pans at 225 degrees for four hours.
