Rosettes Recipe
Traditional Swedish Christmas cookie. First cousin to a funnel cake; crispy, dusted with powdered sugar. Can be vegan without the eggs, but may be hard and brittle instead of crispy.

Ingredients
  • 10 ounces water
  • two large eggs
  • 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract, or extract of choice
  • 12 ounces all-purpose flour
  • cooking oil for deep frying
  • set of Rosette irons
  • Powdered sugar

Directions
  1. Heat deep fryer to 350 degrees, heat Rosette irons in oil.
  2. Whisk water, eggs, sugar, salt and extract together in a mixing bowl until well blended.
  3. Add flour, whisk until smooth; pour batter into loaf pan for ease of dipping.
  4. Dip hot Rosette iron in batter; do not submerge. Batter should coat the iron to just below the top.
  5. Put battered iron into the hot oil, fry until the bubbling is almost stopped and Rosette is light golden color, remove from oil. Sometimes the rosette will fall off into the oil, have a pair of tongs handy to snatch it out.
  6. Tap the Rosette off the iron onto a paper towel or other material to drain, let stand until cool.
  7. Dust with powdered sugar.
  8. Makes about four dozen.
  9. Note: I recommend Nordic Ware Rosette irons. They can be found on eBay, or ordered from Nordic Ware at www.nordicware.com, though a little pricey from the company.
