Tequila Pork Tenderloin

- 1/4 cup prepared mustard shopping list
- 2 pound pork tenderloin shopping list
- 1/4 cup vegetable oil shopping list
- 2 cloves garlic cut into halves shopping list
- 1/4 cup chopped carrots shopping list
- 1/4 cup chopped celery shopping list
- 1/4 cup lime juice shopping list
- 1/4 cup tequila shopping list
- 2 teaspoons ground red chilies shopping list
- 1 teaspoon cumin shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon dried oregano shopping list
- 1 teaspoon dried thyme leaves shopping list
- 1/4 teaspoon pepper shopping list
- 4 medium tomatoes chopped shopping list
- 1 small white onion chopped shopping list
- 1 bay leaf shopping list
- 1/4 cup snipped parsley shopping list
How to make it
- Spread mustard over pork.
- Heat oil and garlic in skillet until hot.
- Cook pork in oil over medium heat until brown then remove garlic.
- Stir in remaining ingredients except parsley then heat to boiling and reduce heat.
- Cover and simmer until pork is done about 30 minutes.
- Remove bay leaf then sprinkle with parsley.
