How to make it

  • Put the ground pistachios, reserving about 2 tsps. for decorating, in a heavy-bottom saucepan with the milk and cream and bring to a boil.
  • In a large bowl, beat the egg yolks with the sugar, then slowly pour in the hot milk and cream, beating continuously. Pour the custard mixture back into the saucepan and cook over low heat, stirring continuously, until it thickens, then remove from the heat. Stir in the rose water and let the mixture cool.
  • At this point you can churn in an ice-cream maker, following the manufacturer's directions.
  • Alternatively, pour into a freezer proof container and freeze for 1 hour, or until partially frozen. Remove from the freezer, transfer to a bowl and beat to break down the crystals. Freeze the mixture again for 30 mins., then beat again. Freeze once more, until firm.
  • Remove the ice cream from the freezer and let stand for 10 to 15 mins. before serving.
  • Meanwhile, preheat the broiler to high,. Sprinkle the mango slices with confectioners sugar and broil for 3-4 mins., or until they are slightly carmalized. Serve immediately with scoops of ice cream, decorated with a sprinkling of the reserved pistachios.

    Mango is so delicious all by itself broiling makes it so succulent my mouth is watering just thinking about it. I always wanted a recipe for pistachio ice cream which is my favorite.
    So Lori you have hit upon two of my favorite combinations in one yummy recipe.
