I made this with our leftovers from Thanksgiving Turkey. Thank God I have more in the freezer can't wait to make it again.

Ingredients
  • 1 medium onion chopped
  • 1/3 cup butter or margarine (I used parkay)
  • 1/2 c all purpose flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 can chicken broth
  • 2/3 c milk
  • 2 cups cooked turkey pieced off leftover turkey
  • 1c shredded cheddar cheese
  • 1 package (10 oz.) frozen mixed veggies thawed
  • 1 box pie crust

Directions
  1. In a saucepan saute onions in butter.
  2. Stir in flour, salt, pepper until blended.
  3. Add broth and milk. Bring to a boil stirring occasionally.
  4. Add the shredded cheese and stir in well.
  5. Add veggies and turkey and mix together.
  6. Pour into 9" pie crust.
  7. Put top pie shell on top and press seams. Make sure to cut slits in top.
  8. Bake 375 degrees for 45 mnutes
  9. Let cool 10-15 minutes to set firmer.
