Ham N Cheese Strata Pseudo Muffins Recipe

Ingredients
  • 8 slices whole-wheat bread (or whatever is your favourite)
  • 4 slices Cheddar cheese
  • 4 slices Black Forest Ham
  • 1/4 cup butter
  • 6 eggs
  • 1 cup milk
  • 1/2 tsp each salt and pepper
  • 1/4 tsp each dry mustard and Worcestershire sauce
  • 1 green onion, minced

Directions
  1. Preheat oven to 350F and lightly butter 12 muffin cups.
  2. Butter each slice of bread on one side.
  3. Keeping buttered side of bread to the outside, top four slices of bread with cheese and ham evenly, then top with remaining slices of bread, buttered side out, to make four sandwiches.
  4. Using a serrated knife, cut each sandwich into 12 square pieces or cubes.
  5. Lightly pack four cubes into each of the 12 muffin cups.
  6. In a medium bowl, whisk together the remaining ingredients.
  7. Spoon the egg mixture evenly over the filled muffin cups; let stand for 10 minutes so that the bread will soak up most of the liquid.
  8. Bake for 30 minutes or until golden and set. Remove from oven and let stand for 15 minutes, then remove the "muffins" from the pan.
  9. Serve immediately or wrap in plastic individually and refrigerate (will keep in the fridge for 2 days).
  10. Serve warm or at room temperature.
  11. Enjoy!!
