King Ranch Chicken Recipe

Spicy Chicken Casserole makes a meal in itself. Add a guacamole salad and some fresh fruit and what a meal.!!

Ingredients
- 1 1/2 chicken fryers baked or boiled and chopped
- 1 can Cream of Chicken Soup
- 1 can Cream of mushroom Soup
- 1 can Rotel tomatoes
- 1 pkg. (10) corn tortillas
- 1 lb. longhorn cheese grated
- 2 tbl. butter melted
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
Directions
- dip tortillas in broth from boiling the chicken and tear apart
- mix all soups, Rotel tomatoes, onion, bell pepper, and butter in a bowl and set aside
- In a 9x13 pan place a layer of the tortillas softened with the broth on the bottom
- next a layer of chicken
- layer of soup mixture
- layer of cheese
- repeat layering ending with cheese on top
- Bake 35-40 minutes
- 350' oven
