Indonesian Lamb Curry Recipe
A delicious, easy recipe that brings home the flavors of Indonesia. The recipe was originally published in Hunts Complete Tomato sauce Cookbook copyright1976. The last time I fixed this recipe was in 1983. It was delicious.

Ingredients
  • 2 lbs lamb shoulder, cubed
  • 1 onion, thinly sliced
  • 1 clove garlic, minced
  • 3 tb butter
  • 1 8 oz can Tomato Sauce
  • 1/2 cup each; water and ketchup
  • 2 tb brown sugar, packed
  • 2 tsp curry powder
  • 1 tsp salt
  • 2 cubes chicken bouillon
  • 2 apples, pared, cored and sliced
  • 1 unpeeled orange, thinly sliced
  • 1/2 cup seedless raisins
  • 4 cups hot cooked rice

Directions
  1. Saute lamb, onion and garlic in butter in a large skillet or Dutch overn, until onion is soft and lamb loses redness. Stir in remaining ingredients, expect rice; blend well. Simmer, covered, 1 hour over medium heat; stir occasionally. Serve over hot cooked rice.
