Ingredients
  • 1 pkg. scalloped potatoes
  • 1 (16oz) can diced tomatoes
  • 1 1/2 c. water
  • 1/4 tsp. oregano
  • 1 pkg.( 4oz) pepperoni
  • 4 oz shredded mozzarella
  • ** can add additional toppings like with a regular pizza just remember to use small amounts.
  • ** can also add additional spices like garlic or red pepper flakes to the sauce.

Directions
  1. Preheat oven at 400*F
  2. In 2 qt pan empty potatoes and seasoning package.
  3. In a small sauce pan heat tomatoes, water and oregano until boiling
  4. Pour sauce over potatoes.
  5. Top with pepperoni and cheese.
  6. Bake in oven for 30 minutes or until tender
  7. Serve.
