Slow Cooked Greek Roast Lamb With Salad Recipe

Ingredients
  • Meat
  • 1.8 Kg Leg of Lamb or shoulder
  • 5 tblsp olive oil
  • 4 tblsp fresh or dried oregano (or enough to sprinkle the meat)
  • 5 crushed galic cloves
  • 2 lemons (juice only)
  • 2 good pinches of salt
  • 2 good pinches of pepper
  • Salad
  • 2 tblsp fresh Oregano
  • handful of halved cherry tomatoes
  • 1 chopped lebanese cucumber
  • 1 red onion
  • 1 red pepper
  • Big handful of diced fetta
  • handful of black olives
  • 6 tblsp olive oil (extra virgin)
  • 2 tblsp balsamic vinegar
  • salt
  • Some nice fresh bread

Directions
  1. Meat
  2. Rinse lamb under cold water and pat with paper towl dry. Place in large pot that can be covered and can be placed in oven.
  3. Coat meat with olive oil
  4. Rub crush garlic into meat leaving good coating of galic
  5. Squeeze juice of 2 lemons over
  6. sprinkle with oregano
  7. season meat with lots of salt and pepper
  8. Pour 2cm of water into pan
  9. Place in over at 140c (fan) for 3.5 hours coating with pan juices every now and again.
  10. Remove cover and cook for a further 30 minutes.
  11. Allow meat to rest for atleast 10 minutes.
  12. Salad
  13. In a small jar (with lid) pour the olive oil
  14. Then pour the balsamic vinegar. We are looking for 1/3 balsamic too 2/3 olive oil.
  15. Shake the mixture to mix
  16. Throw all the salad together with some fresh oregano and lightly coat with balsamic/olive oil dressing mixing well with hands. leave some dressing aside.
  17. Serve with meat and some fresh bread. Use remanding dressing to dip bread.
