How to make it

  • Cut the sweet potatoes into pieces about 1 inch long and 1/4 inch thick.
  • Melt butter in an iron skillet
  • Saute the sweet potatoes in butter for 5 minutes.
  • Add the tequila, lime juice, and sugar.
  • Cook covered over moderate heat for 5 minutes.
  • Serve.
