Hearty Black-eyed Peas Recipe
My family loves this recipe. It's easy to make and only uses one pan so clean up is a snap. It doubles well and can stretched by adding more black-eyed peas. I think the recipe originally came from Taste of Home.

Ingredients
  • 1 ¼ cup of cooked bulk pork sausage (about ½ pound uncooked)
  • 1 - 15 ounce can of Black-eyed Peas, drained and rinsed
  • 1 - 14 ½ ounce can of diced tomatoes
  • ½ teaspoon dried oregano
  • ¼ to ½ teaspoon of dried rosemary leaves, crushed
  • ½ cup chopped green Bell pepper
  • ½ cup chopped onion
  • 2 cloves of garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • ¼ to ½ cup of grated cheddar cheese

Directions
  1. In a large skillet, combine all ingredients, except for the cheese. Bring to a boil. Reduce heat; cover and cook for 10 to 15 minutes. Sprinkle with cheese and serve. Makes 2-4 main dish servings or 4-6 side-dish servings.
  2. Note: I’ve used a full pound of uncooked sausage. It makes it meatier for those "carnivores".
