Hearty Black-eyed Peas

- 1 ¼ cup of cooked bulk pork sausage (about ½ pound uncooked) shopping list
- 1 - 15 ounce can of Black-eyed peas, drained and rinsed shopping list
- 1 - 14 ½ ounce can of diced tomatoes shopping list
- ½ teaspoon dried oregano shopping list
- ¼ to ½ teaspoon of dried rosemary leaves, crushed shopping list
- ½ cup chopped green bell pepper shopping list
- ½ cup chopped onion shopping list
- 2 cloves of garlic, minced shopping list
- ½ teaspoon salt shopping list
- ¼ teaspoon ground pepper shopping list
- ¼ to ½ cup of grated cheddar cheese shopping list
How to make it
- In a large skillet, combine all ingredients, except for the cheese. Bring to a boil. Reduce heat; cover and cook for 10 to 15 minutes. Sprinkle with cheese and serve. Makes 2-4 main dish servings or 4-6 side-dish servings.
- Note: I’ve used a full pound of uncooked sausage. It makes it meatier for those "carnivores".
