Olive Nibblers

- 2 cups (8 ounces) finely grated extra-sharp cheddar cheese shopping list
- 4 tablespoons unsalted butter, softened shopping list
- 1 cup all-purpose flour shopping list
- 1/8 teaspoon cayenne pepper shopping list
- About 36 large pimiento-stuffed olives or more smaller olives shopping list
How to make it
- Preheat an oven to 400°
- In a food processor add the cheese, butter, flour, and cayenne. Whirl until dough is blended, but but not quite a ball yet.
- Put the dough in a bowl and with a rubber spatula, work the dough into a ball
- Meanwhile, have olives draining well and then pat dry on paper towels
- Roll the dough out into a long "snake" and cut into even pieces that are about a teaspoon each
- Roll the dough in the palm of your hand to form a small ball
- Then flatten it into a disk between your palms, place an olive on the dough and shape the dough around the olive, completely sealing it
- Place on an ungreased baking sheet
- Continue with remaining dough and olives - this is a great time to get the kids in the kitchen
- Bake until they smell delicious and the dough looks dry and golden, about 20 minutes
- Serve warm or room temperature

I love these things - I want to try them with some garlic stuffed olives next time, too. No, you cannot eat just one of these little devils! Thanks for reminding me of this appetizer that I haven't made in ages - it's a keeper.
