Black Bean Enchilada Casserole Recipe

Ingredients

1 1/2 lb. hamburger

1/2 cup chopped onion

1 (15oz) can black beans-rinsed

1 (10oz) enchilada sauce

1 can chopped green chiles

1 pkg taco seasoning mix

1 can cream of mushroom

1/3 cup milk

3 cups monteray jack cheese-or what you have on hand

12 corn tortillas

To taste:

garlic

chili powder

red pepper-I use Mrs.Dash extra spicy blend

onion salt

black pepper

cayenne pepper

Directions

Preheat oven to 375.

Brown the hamburger and onion together, rinse when done.

Put back in same pan, add the black beans.

Add the taco seasoning following the directions on the pkg.

In the mean time in a sauce pan mix the soup with milk and seasonings, heat until blended and soup is creamy.

When the meat mixture is done add the enchilada sauce, mix well.

Spray 8x8 pan with cooking spray.

Start layering in the following- 4 tortillas-you will have to overlap them, 1/2 meat mixture, 1 cup cheese, repeat one more time.

Put the last 4 corn tortillas on and spread half of the soup over then flip your tortillas, pour remaing soup over tortillas.

Spread with remaining cup of cheese.

Add more spices if you want.

I cook mine at 375 for about 25-30 minutes or until lightly brown and bubbly.

Serve with salad.

Thanx on the congrats for my adoption. Crazy thing is, we are now pregnant due early July
