Black Bean Enchilada Casserole

- 1 1/2 lb. hamburger shopping list
- 1/2 cup chopped onion shopping list
- 1 (15oz) can black beans-rinsed shopping list
- 1 (10oz) enchilada sauce shopping list
- 1 can chopped green chiles shopping list
- 1 pkg taco seasoning mix shopping list
- 1 can cream of mushroom shopping list
- 1/3 cup milk shopping list
- 3 cups monteray jack cheese-or what you have on hand shopping list
- 12 corn tortillas shopping list
- To taste: shopping list
- garlic shopping list
- chili powder shopping list
- red pepper-I use Mrs.Dash extra spicy blend shopping list
- onion salt shopping list
- black pepper shopping list
- cayenne pepper shopping list
How to make it
- Preheat oven to 375.
- Brown the hamburger and onion together, rinse when done.
- Put back in same pan, add the black beans.
- Add the taco seasoning following the directions on the pkg.
- In the mean time in a sauce pan mix the soup with milk and seasonings, heat until blended and soup is creamy.
- When the meat mixture is done add the enchilada sauce, mix well.
- Spray 8x8 pan with cooking spray.
- Start layering in the following- 4 tortillas-you will have to overlap them, 1/2 meat mixture, 1 cup cheese, repeat one more time.
- Put the last 4 corn tortillas on and spread half of the soup over then flip your tortillas, pour remaing soup over tortillas.
- Spread with remaining cup of cheese.
- Add more spices if you want.
- I cook mine at 375 for about 25-30 minutes or until lightly brown and bubbly.
- Serve with salad.
