I have been making this meatloaf for a while. I am not sure where the recipe came from but I alternate this with my snow-capped meatloaf recipe. It has a terrific brown sugar and ketchup glaze.

  • 1/2 c. ketchup
  • 1 1/2 lbs lean ground beef
  • 3/4 c. milk
  • 2 eggs
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 1 small onion, chopped
  • 1/4 t. ground ginger
  • 3/4 c. finely crushed saltine or ritz crackers

Directions

  3. In a mixing bowl, thoroughly mix all remaining ingredients and shape into a loaf. Place on top of the ketchup and sugar.
  4. Bake in preheated oven for 1 hour or until juices are clear.
  5. Carefully invert meatloaf onto plate so that brown sugar and ketchup glaze is on top.
