Chicken with green olives

- 1-2 lbs chicken legs shopping list
- 1-2 lbs chicken thighs shopping list
- 6-7 cloves garlic crushed shopping list
- 1 medium - large spanish onion halved and sliced shopping list
- 1 6 3/4 oz jar of green olives I use Goya green olives shopping list
- salt and pepper to taste shopping list
- 1 1/2 bottles of dry white wine or White cooking wine shopping list
- extra virgin olive oil shopping list
- 2-3 yellow potatoes peeled and Cubed. shopping list
- vegetable oil to fry potatoes shopping list
How to make it
- The night before you intend to prepare this dish:
- Crush and mince the Garlic and add to a 1 Gallon Ziploc bag along with the Chicken and 1 bottle of the Wine. Let sit overnight in the Fridge.
- Day of preparation:
- Remove Chicken from Ziploc bag and RESERVE liquid.
- In Dutch Oven large enough for all of the chicken, coat surface with Olive Oil and brown chicken on all sides.
- Remove chicken and place to the side. Add onions to the Dutch oven and cook until semi-translucent. Reduce heat to medium.
- Put Chicken back in the Dutch Oven and pour liquid from Ziploc bag in the pan. Add wine to bring the liquid level to just below the Chicken.
- Add 1/2 - 3/4 jar of Olives with Juice from the jar.
- Bring to boil and simmer for 45minutes - 1 hour until tender.
- In separate frying pan. Fry potatoes until golden brown then remove and drain on paper towels. Add to Chicken dish 5 minutes before serving.
- Serve over white Rice.
