How to make it

  • The night before you intend to prepare this dish:
  • Crush and mince the Garlic and add to a 1 Gallon Ziploc bag along with the Chicken and 1 bottle of the Wine. Let sit overnight in the Fridge.
  • Day of preparation:
  • Remove Chicken from Ziploc bag and RESERVE liquid.
  • In Dutch Oven large enough for all of the chicken, coat surface with Olive Oil and brown chicken on all sides.
  • Remove chicken and place to the side. Add onions to the Dutch oven and cook until semi-translucent. Reduce heat to medium.
  • Put Chicken back in the Dutch Oven and pour liquid from Ziploc bag in the pan. Add wine to bring the liquid level to just below the Chicken.
  • Add 1/2 - 3/4 jar of Olives with Juice from the jar.
  • Bring to boil and simmer for 45minutes - 1 hour until tender.
  • In separate frying pan. Fry potatoes until golden brown then remove and drain on paper towels. Add to Chicken dish 5 minutes before serving.
  • Serve over white Rice.
